Tropical Confetti Slaw
I have to tell you that there's a lot of really bad slaw
out there. I hope this makes up for most of them!
When I was a cooking specialist in the gourmet kitchen for a large grocery chain, I got to not only show people how to use and taste the dishes made with our products I loved, however, creating my own recipes using these products. I must say, that I was complimented all the time on taste and creativity. Most of the other stores had their names as the creator of the recipe on the cards. My boss would take all our names off of them and give the store credit for them saying they "owned" my creations.. She was one of those pain in the #%&&%# managers who didn't follow the spirit of the law or even the letter of the law. She was in a category all by herself. However, I digress, and I will stay in that frame of thought because I will get on a tangent like you wouldn't believe. For instance:

Anyway, I took some of my best ideas and came up with my own healthier versions of these dishes outside of work.
Whenever I made this slaw, I would sell out of product and it became one of their most popular recipes. I had people tell me they took it to a pot luck or served it on Easter picnics and wouldn't tell people what was in it! It then became their new signature dish.
Fresh pineapple and juice, lots of raw veggies and slivered almonds are among the ingredients. You could also used a mixed chopped bag of slaw. I've had people tell me they hated coleslaw until they tried mine.
I make this often and its also great the next day. Yeah, like there was any the next day.
Combination of (equaling about 5-6 cups) shredded:
white cabbage
purple cabbage
carrot
finely chopped kale (optional)
1 cup FINELY chopped fresh pineapple (save some of the juice. I just squeeze it out of the outside)
1/2 finely chopped red onion
1/2 cup dried cranberries or cherries
1/2 cup thin sliced almonds
dressing:
1/2 cup of the fresh pineapple juice. (or more if needed)
1/4-1/2 cup poppyseed dressing***
salt (I don't use any) and pepper to taste
*** I use BRANDLESS poppyseed dressing. It is organic,vegan and non GMO. All their products are $3.00 each and everything I've ordered so far has been amazing. I also like what the company stands for.
In a large bowl combine: (about 1 hour in advance)
The cabbage mix and other ingredients except dressing. In a separate bowl, thin the poppyseed dressing with the pineapple juice. Pour onto mix in large bowl and toss until completely combined.
Season to taste.
*** I start with the 1/4 cup of poppyseed dressing. Depending on how much you wind up with, it may need more. Always start with the least amount. Yes, there is some sugar in it, but you have to realize that this is broken down i
into at least 8 servings.
*****OK, this is the 5th time you've "tasted" this to make sure it's good. Put it in the fridge and walk away. WALK AWAY I tell you!
