Cupcakes Plus Muffins = Cuffins!
It's taken me awhile to get these next recipes tweaked just right (you should have seen my kitchen). In fact one batch of tea bread was quite problematic because, quite frankly, came out like a gooey blob inside and hard outside shaped like a brick. Totally inedible because my "official" tester wouldn't even try it. It was tossed into the trash and it landed with a tremendous loud thump.
This had me stumped and I couldn't for the life of me figure out where I went wrong. That night in bed I sat straight up and said " I can't believe I did that. I had forgotten the baking powder and the baking soda. Really Sharon? At least it was an easy fix and I didn't have to scrap the whole thing and completely start over. I have a bad habit of not getting all the ingredients out before I begin. It's called mise en place which means everything is ready in place. (pronounced: meece on plas, yeah like you're ever going to use it too often). Moot is another word you don't use much. Moot has nothing to do with any of this.
ANYWAY...Cuffins. Hardier than a cupcake, lighter than a muffin. Fall is here and I love having a warm cuffin during the day. (Alright, maybe one more at night). These two favorite treats together gives I think you get the best of both worlds. I made several different batches of these cuffins and every time I went to the kitchen two more were gone. Success! Delicious and of course very healthy. Enjoy.
Chocolate Peanut Butter Cuffins
350 oven 25-30 minutes or until tester comes out clean
2 ripe bananas 4 eggs 1/4 c softened coconut oil1/4 c xylitol or stevia (or your favorite sweetener
1/4 c almond flour
1/2 cup glutin free flour mix,or flour of your choice* 1/2 c smooth or chunky peanut butter 2T magic mix ** 2T espresso powder* or instant coffee crystals (optional, but really good) 1/4 c dark coco powder (not dutch) 2 tsp. cinnamon 1 tsp. baking powder and 1 tsp. baking soda (don't leave these out) LOL 1/4 c vegan dark chocolate chips (or your choice)
In a large bowl, combine all the dry ingredients except chocolate chips and set aside
Mash bananas and mix with coconut oil and peanut butter. Whisk eggs and add to mixture. Add dry ingredients in two batches mixing well after each. Stir in chocolate chips. Divide between cupcake cups filling 2/3 full. Bake
After they cool, you can dust confectioners sugar or light thin drizzle.
* use a little more if batter is too thin.or add a little milk alternative if too thick
