Sweet Potato "Toast"


 It was actually my husband that first told me about this. He made some and I've been hooked ever since. 
Get a large, wide sweet potato and cook to fork tender.  Do not over cook!  You need for it to hold together when you slice it.
I cut the ends off and make into 1/4 inch slabs.  You can put them in the toaster until browned.  Sometimes t takes more then one time.
I prefer to heat a tiny bit of grapeseed oil and brown them that way until nice and crispy.. There are tons of ways to top them.  Above are two of my favorites.  Melted butter (or Earth Balance for vegan) and a swirl down the middle of home made triple berry jam. Another way I love it is a smear of Kate Hill vegan cream cheese like product (or cream cheese if you eat dairy), thinly sliced and arranged apples, cinnamon (or pumpkin pie spice) and chopped nuts on top. There is no limit to the combinations you can come up with!

So great for lunch or a quick snack.  I store the ready made slabs in the fridge.  They will last a few days.  Kids love them as well.
