Apple Power Pancakes
This is probably my family's favorite dinner! I love making breakfast for dinner and my guys love eating them. I serve these with fresh fruit and scrambled eggs that have bits of onion, green pepper and tomatoes. The best part is that it doesn't matter how picky your eaters are as they will eat every last one . I make lots of these and freeze some for a quick breakfast that will energize and sustain you.
These are the best pancakes if I say so myself.
2 Tablespoons coconut oil, melted and set aside
2 eggs, beaten (or vegan equivalent)
1 1/4 cups buttermilk (or milk of your choice if using less dairy)
1/4 c organic Greek yogurt (or applesauce, if using less dairy)
1 1/4 cup Whole wheat pancake mix (I use Harvest Grain)
1/4 cup magic mix (recipe on my blog)
2 Tablespoons unflavored whey (or plant protein)
1 small finely chopped apple, use your favorite.
1/4 cup finely chopped pecans (optional, but I highly recommend them}
Combine pancake mix, magic mix and whey in a bowl and set aside.
In another bowl, beat the eggs and stir in buttermilk, coconut oil nd yogurt.
Add to dry ingredients and combine well. If the batter seems too thick, add more buttermilk, a little at a time until desired consistency is achieved. Drizzle the coconut oil over mixture and blend in.
Fold in the apple and pecans.
Heat a nonstick skillet and brush with a little oil. Cook pancakes and keep warm until ready to serve.
Make sure you only use 100 percent maple syrup.
Blueberries instead of apples are also luscious.
