Recipe for Bo's Brownies

No one ever needs to know that there are black beans in here. 

My son Sacha texted me after I sent him this recipe. "Who is this Bo and why am I not eating these brownies"? There is no Bo.  It is short for bodacious.  He said he usually wasn't a brownie fan, but this looked amazing. Why yes, yes they are.  I'm your mother, trust me.

1 pkg. Organic Brownie mix (I used Annie's) Or start with your favorite recipe.

1/2 cup black beans,   pulverized with 2 Tablespoons water

1/4 c melted butter (NEVER use margarine again!) (or coconut oil if using less dairy)

1/4 c buttermilk (Or milk of your choice if using less dairy)

1/4 c grass fed organic yogurt  (applesauce or avocado if using less dairy)

2 Tablespoons unflavored whey (or plant protein)

2 Tablespoons magic mix*

2 eggs, beaten (or vegan equivalent)

1/2 cup chopped nuts 

 

Preheat oven to 350 degrees  

Empty dry mix into a bowl. Stir in the whey and magic mix. Set aside.

In another bowl, combine the wet ingredients.  Stir in dry miz and keep stirring until well blended.

Pour into a prepared square pan and bake for about 45 minutes.

Looks delicious. I like brownies made with shredded zucchini. Added yogurt is a great idea. I'm on keto looking to add more veggies to my life.
