Truffle Salt Green Beans Almondine
The first time I served this recipe, I had so many men and kids eating it that I actually ran out 3 times.
Later that week a man came practically running past my kitchen on his way to produce. He yelled out that he was on his way to get more green beans. I also heard him call back that he'd made then three times that week, and that he didn't even like green beans!
1 bag microwave ready fresh green beans. (or prep your own and microwave 3 minutes)
1 shallot, thinly sliced
1Tablespoon olive oil
1 teaspoon butter(or vegan equivalent. I like Earth Balance)
3 Tablespoons thinly sliced almonds (or more, if you wish)
Truffle salt, to taste*
Microwave green beans according to directions.
Heat olive oil on medium heat in a saute pan. Add shallot and saute for about a minute,
Add green beans to the pan and continue to cook while stirring another 2 minutes.
Toss in almonds and finish cooking when the almonds have turned golden.
Add the butter, sprinkle with truffle salt and toss.
Serve immediately. There will be no leftovers.
* I was using Sabatino Truffle salt before Oprah listed it as one of her favorite things.
It's delicious in so many applications. (try it on popcorn!) Just make sure you start out easy and remember that you can always add more.
